Selection of a substrate for the cultivation of baker's yeast

Abstract

Despite the widespread use of molasses as the main substrate for the cultivation of baker's yeast, there is a need to research new, more complete and profitable substrates. Unlike molasses, rice bran, as a by-product of rice grain processing, contains all the necessary substances for active growth and high enzymatic activity of baker's yeast.
